Il Borro estate, owned by the Ferragamo family, is representing over 1,000 years of rich heritage and one of the most coveted resorts in the world. Sustainability and integrity lie at the core of the Il Borro philosophy. Il Borro Tuscan Bistro Dubai translates the history, innate hospitality and biodynamic approach for a new Middle Eastern audience. Central to the Il Borro story is the food offering, led by the brand’s Executive Chef Andrea Campani working closely with the resident Executive Chef Maurizio Bosetti bridging the authenticity of the Tuscan style of cooking. The menu offers dishes that will satisfy guests of all preferences with seasonal menu offerings from produce grown and brought in from Il Borro’s farms.

Bio Extra Virgin Olive Oil

Intensely green in colour, dense and crystalline, it has a deeply aromatic bouquet, full of floral and fruit scents and notes of cut grass. Taste: the aromatic bouquet is confirmed on tasting, with the addition of salvia and basil aromatic notes. The after taste has slight peppery hints and, more particularly, a delicately-bitterish flavour which gives vigour to the structure of oil.

Variety: 60% Frantoio | 15% Leccino | 10% Moraiolo | 10% Pendolino | 5%Fiorentino

Ideal with: The typical Tuscan “Fett’unta” (grilled bread with garlic and olive oil) or with zolfini bean soup. It is also very good raw, on grilled red meat.

L'Orto del Borro

L’Orto del Borro was founded in 2012 by the passion and attention to the environment and the local tradition.

The desire and the will to get local produce becomes the philosophy of the farm; thus begins the path of conversion from conventional to organic farming : a change of direction in respect of the nature and cause of crop cycles. Experts in the field follow all of the products of processing stages: from the sowing, growing to the collection, so as to ensure the excellence in the final quality. Seasonal vegetables are supplied to the Dubai Tuscan Bistro.

Organic Wines

Our vines grow on the Valdarno hills at the foot of the Pratomagno Mountains, a perfect place for a vineyard. The unique pedoclimatic conditions infuse our wines. A great lake covered the entire valley during the Pliocene epoch leaving an enduring legacy in the chemical composition of the soil, a land ideal for making fine wine. Today mild winters and a temperate climate allow us to make the best use of this legacy.

Autochthon grape varieties, such as Sangiovese, and those of the “Tuscan tradition,” such as Merlot, Cabernet Sauvignon and Petit Verdot grow side by side adapting perfectly to the variability of the soil. In all 45 hectares are under vine, 300 to 500 metres above sea level, divided between five varieties of grape to extract the very best wines from our precious terroir.
